Our honey varieties

Fir Honey “Vanilla” PDO (Organic)

The star of our production. The famous “Vanilla” fir honey with Protected Designation of Origin (PDO) is one of the most distinctive honeys in the world. It is not a flower honey, but a honeydew honey, produced by bees collecting the sweet secretion of insects living on fir trees. Its characteristic light amber color, slow crystallization creating a buttery, fine-grained texture, and mild, sweet aroma with malty notes make it unique. Its production is limited and inextricably linked to the fir forests of mountainous Arcadia, where the microclimate and traditional harvesting technique give it this distinctive character.

Thyme Honey

Thyme honey is one of the most beloved and recognizable Greek honeys. Our hives are transported in July to the slopes of Neapoli, Sparta, where thyme blooms and fills the air with its intoxicating aroma. The result is a honey with an intense, complex aroma, rich taste, and light amber color. Its crystallization is fine-grained and retains its aromatic characteristics intact.

Fir Honey (Organic)

Beyond the PDO variety, we also produce other fir honey varieties from different regions of Arcadia, each with its own unique character. Light, sweet, with a characteristic texture that melts in the mouth, it is an excellent choice for daily consumption.

Fir – Pine (Organic)

An interesting blend combining the aromas of the mountain and the forest. From mountainous Arcadia and the pine forests of Northern Evia, this honey has a darker color, rich taste, and slow crystallization, evoking the scents of the Greek forest.

Oak

From the unique oak forest of Foloi, one of the most important oak forests in Greece, we harvest oak honey in June. It has a dark color, rich, malty taste with a characteristic slight bitterness, and is especially loved by those seeking more complex flavors.

Heather & Strawberry Tree

In autumn, our hives descend to Mount Parnon, where heather and strawberry tree bloom, offering bees the last major flowering of the year. Heather honey has a dark color, intense taste, and characteristic jelly-like texture, while strawberry tree honey is rarer, with a distinct aroma and taste.

Blossom, Orange Blossom, Chestnut

They complete our rich range. Blossom honey, from the spring flowers of Arcadia, is sweet, light, and ideal for daily use. Orange blossom honey, with its fresh, fruity aroma, and chestnut honey, with its dark hue and distinctive, slightly bitter taste, complete a palette of flavors to suit every preference.

Other hive products

The hive is a microcosm offering much more than honey. With respect and knowledge, we also collect other valuable products:

  • Royal Jelly: The queen’s food, rich in vitamins, minerals, and amino acids. Considered one of nature’s most nutritious supplements.
  • Bee Pollen: The protein-rich food of bees, rich in vitamins, trace elements, and antioxidants. Ideal for boosting the body.
  • Propolis: The resinous substance bees collect from tree buds and use to seal and sterilize the hive. The natural antibiotic, with strong antimicrobial, antiviral, and anti-inflammatory action. Available in drops, capsules, or raw mass.
  • Beeswax: Pure, natural wax, ideal for making candles, cosmetics, and balms.
  • Honey with nuts: Traditional sweet treat, with almonds, walnuts, or hazelnuts, combining the sweetness of honey with the crunchy texture of nuts.
  • Rakomelo: The warm, aromatic winter drink, made from raki or tsipouro, honey, cinnamon, and cloves. Ideal for cold nights, with rich taste and aroma.
  • Balm with therapeutic properties: Made with pure beeswax, propolis, and natural oils, they offer hydration, soothing, and protection to the skin.

The production process: From the hive to the jar

The exceptional quality of our products is no coincidence. It is the result of careful, continuous care that starts with choosing locations for our hives and ends with gentle packaging, preserving all the nutritional components intact.

Location selection: We don’t place our hives just anywhere. We seek pristine, clean landscapes, away from intensive farming and chemical contaminants. The mountains of Arcadia, Laconia, and Evia provide the ideal environment.

Respectful migration: Following the flowering, we move the hives to different areas, always at night when bees are calm and not flying. Each move is done with care to avoid causing stress to the hives.

Care without chemicals: At no stage do we use medication or synthetic products. Bee health is ensured through natural practices, good quality feed when needed, and respect for their natural cycle.

Gentle extraction: The honey extraction process is done with gentle methods, at low temperatures, to preserve enzymes, vitamins, and antioxidants intact. The honey is neither heated nor undergoes any processing that would alter its natural characteristics.

Immediate packaging: Immediately after extraction, the honey is packaged in sterilized jars, preserving all its freshness and aroma. Each jar bears our signature and the promise of a pure, genuine product, born from the heart of Greek nature.
